VEGETABLE OF THIS MONTH, APRIL 2011: CARROTS
The word "carrot" is related to the ancient Greek word Karoten. Carrot juice was commonly used in ancient Greece to cure stomach disorders of all kinds. The three most important elements in carrots are: BETA-CAROTENE, VITAMIN A, and PHYTOCHEMICALS. With these three elements, carrots improve muscles, soft tissue and skin health; reduce the risk of heart disease and high blood pressure, boost immunity (especially among older people), and protect the skin from sun damage. Carrots are also highly effective in the treatment of complexion problems - specifically acne, boils, cysts and rough and dry skin. The potassium that is prevalent in carrot juice neutralizes excess acid and releases vitamin A. Carrot juice is highly beneficial for vision problems. For anyone suffering from eyestrain, occasional blurred vision or problems with night vision, carrots may be the perfect food.
RECIPE: EYESIGHT ENHANCER
3 medium carrots
3 celery stalks
2 medium apples
Juice all ingredients and drink immediately.
RECIPE: CARROT SOUP
This is a very Indian tasting soup because of the earthly bold taste of cilantro and ginger. It is very creamy, but also light, airy and frothy.
I made this soup last weekend and enjoyed it with relish!
2 cups carrot juice
1 avocado
1 Tablespoon cilantro
1 Tablespoon ginger
1 teaspoon Bragg liquid aminos (I use Tamari as it is gluten-free)
Blend all in a blinder or Vita-Mix.

FRUIT OF THIS MONTH, APRIL 2011: BANANAS
Bananas are high in potassium. One medium banana provides 400 mg of potassium.
Potassium is a mineral that is lost during physical exercise. It is required to regulate your heartbeat, blood pressure, and may help reduce the risk of stroke in older people. Bananas are also rich in vitamin B6 and they are a good source of fiber, Vitamin C and magnesium.
Keep green bananas in a paper bag to help them ripen.
RECIPE: LEMON TART PIE
In a blender, add:
5 apple bananas, small tasty banana variety (I use standard bananas)
1 cup fresh lemon juice
1/4 cup raw unheated honey (I use maple syrup)
3 tablespoons psyllium powder (it can be bought in any natural health food store)
1/2 cup pine nuts
Blend until creamy. Pour into Universal Pie Crust. Store in freezer for 1-2 hours,
then serve.
UNIVERSAL PIE CRUST
In a food processor using the S blade, add:
2 cups hazelnuts
2 cups dates, pitted (soak in 3 cups of water for ten minutes before putting them in the food processor; discard water)
(I don't discard water but drink it. It tastes good!)
Process nuts and dates until it has a thick dough-like consistency.
Press in a pie pan. Make sure not to eat all the crust when taste testing!
